Author of ‘How To Vegan’ Steven Wildish, whose book explores the A-Z of veganism, has co-founded Notorious Nooch Co., a naturally flavoured nutritional yeast for meat-eaters and vegetarians to easily transition to plant-based diets.
U.K.- based Notorious Nooch Co. is a vegan brand that aims to replicate the taste of meat and dairy to provide an easier transition for those switching to plant-based diets or interested in doing so.
After extensive research, the team realized that while deactivated yeast might offers a nutty and savoury flavour that has been a store cupboard essential for many vegans, the taste of the existing products in the market is nowhere close to meat and dairy flavours, which is how they ended up starting Notorious Nooch Co.
The brand has released two products, Smokey Bacon and Cheesy Immature, both developed by toasting yeast flakes in order to provide a naturally smokey flavour to the product. Notorious Nooch’s label consists of less than five ingredients.
In a statement sent to Green Queen, Wildish, the author of “How To Vegan” that is not just meant for vegans but addresses meat-eater and vegetarinas, said, “On my own journey to becoming vegan, I loved trying out new tricks to recreate the food I loved as a kid. For years a big part of adding a cheesy flavour to vegan meals has been to use nutritional yeast, but it never quite satisfied the craving.”

Priced at GBP£3.99 (approx. US$5.53) for a 100 gram pack, the yeast flakes can be sprinkled on everything including alternative meats, pizzas, pastas, chips, greens and popcorn and are currently available on the company’s website and via Amazon.
Certified by the VeganSociety and labeled kosher by KLBD, the products are organic, gluten-free, GMO-free and soy-free.
Back in December of last year, a biotech unit under Lesaffre, a French fermentation giant and the world’s biggest yeast manufacturer unveiled a yeast protein for plant-based meat and cheese alternatives with a clean flavour profile to tackle the issue of off-taste that several consumers find in plant-based foods.
Elsewhere, Givaudan, a Swiss flavour and fragrance manufacturing giant revealed its artificial intelligence(AI) driven tool that will help identify positive and negative flavour drivers this creating new and fresh food products for consumers.
A Future of Food report revealed that by 2025, one-quarter of Brits will identify as a vegan or vegetarian.
In addition to this report, a recent survey by 3 SIDED CUBE found that over a third of Brits have decided to avoid animal meat products after watching documentaries like Sir David Attenborough’s ‘A Life On Our Planet‘ and ‘The Game Changers‘, backed by James Cameron and Arnold Schwarzenegger.
