California–based Plantishh Bio has unveiled what it claims is one of the world’s first lines of synbiotic plant-based cheeses—Paneer, Panela, Feta, and Queso Fresco—now featured in select Bay Area restaurants. Rooted in culinary tradition, the range honors Indian (paneer) and Latin American (panela, queso fresco) heritage while bringing a modern, gut-friendly twist to familiar favorites.

Plantishh cheeses offer a neutral, creamy flavor and a firm bite that holds up to grilling, sautéing, and simmering. The company’s patent-pending fermentation pairs bioactive cultures with plant fibers for gut support and maintains a clean-label ingredient list. The line is lactose-free, cholesterol-free, has 0g saturated fat per serving and up to 70% less total fat than dairy.

Plantishh Paneer Heads to 30 Bay Area Restaurants

Plantishh Paneer is the company’s flagship product, performing well in high-heat dishes—tikkas, masalas, kebabs, and stir-fries—as well as in cold dishes like salads. Its mild, dairy-style taste soaks up marinades, holds its shape on the grill, and stays tender in simmering sauces, delivering clean slices. Saini shares that 30 Bay Area restaurants—from fine-dining Indian kitchens to beloved vegan spots—are already on board, with wider availability beginning in September 2025. Early menus feature paneer skewers, tikka bowls, paneer curries, and Indo-global tacos, offering chefs a dependable plant-based option that suits modern and nutritious dining.

Plantishh Bio’s patent-pending fermentation and structuring use precise hydration, temperature, and culture control to deliver fresh-cheese bite, moisture retention, and reliable heat performance—with a short, clean-label ingredient list and no synthetic additives or chemical processing aids.

Expanding the Lineup: Panela, Feta & Queso Fresco

Following paneer, Plantishh will introduce Panela, Feta, and Queso Fresco—heritage cheeses rooted in Latin and Mediterranean cuisines. The Plantishh line honors family traditions while translating them for plant-first diners and those avoiding lactose. Expect a creamy-crumbly feta for salads and mezze, a mild, sliceable panela for grilling and snacking, and a bright, fresh queso fresco for tacos and bowls. Plantishh Panela is expected to launch in October 2025.

Sustainability, Climate Impact & Reducing Animal Cruelty

According to Plantishh, swapping dairy for plant-based proteins in its paneer and panela helps avoid enteric methane from ruminants and reduces lifecycle greenhouse gases. Internal LCA estimates >80% lower CO₂e (≈1.8 vs. 9.0 kg CO₂e/kg), ~400 L water/kg vs. 1,500 L/kg for dairy, and ~4× less land—all with zero enteric methane. By removing cows and buffaloes from the supply chain, the approach can also help reduce animal cruelty.
